We use oak and beech, sourced from the nearby Longleat Estate, to lightly smoke the trout. Fresh home grown trout, a lighter salting and a slightly shorter smoking gives a unique succulent flavour to our smoked trout.

Our quest for the best possible smoked trout does mean that the shelf life is limited to 10 days, which is lower than heavily salted and smoked trout.

Small batches and a smokery just a feet feet away from our own home grown trout mean that we don’t have to compromise on freshness and quality.
