Trout don’t like being handled, it causes them stress. But to maximise growth trout should be regularly graded by size so that all the fish in a particular pond are a similar size. Many years ago Chris took the view that his ethos that happy trout taste better outweighed the benefit of regularly handling the trout in order to grade them.

So we only grade our fish when the size differential may compromise the welfare of the smaller fish, accepting a small hit in yield.
This is just one of the many small tweaks Chris has made over the years to create a farming system that puts taste ahead of everything else.
It is impossible to know exactly which of the small adjustments away from the norm make the most difference, but with over 50 years farming trout Chris’ trout farming instinct has got a good track record.
